Lycopene is the natural red colouring of the tomato, which protects the plant from harmful environmental influences. Like beta-carotene, lutein and zeaxanthin, this secondary plant substance belongs to the carotenoids. The bioavailability of lycopene can be increased by adding oils, as the absorption of carotenoids in the body depends on the fat content of the food. Lycopene is mainly found in the human body in the adrenal glands, liver, testicles and prostate.
