Ginger, botanically known as Zingiber officinale, is a plant that originally comes from South Asia and has been an integral part of spice cuisine in its native countries for thousands of years. Nowadays, ginger is cultivated in tropical regions of Africa, Latin America, the Caribbean and Australia. The main source of nutrients is found in the root, an underground branched rhizome, which serves as the plant's food source. The name ginger is derived from the Sanskrit word "sringavera", which means "provided with antler shoots" and refers to the shape of the rhizome.
Ginger grows to a height of 1.2 metres and bears yellowish flowers with a purple lip. The plant is related to cardamom and turmeric. The flavour of ginger is pungent and slightly sweet, with a spicy, lemony aroma. After a harvest period of 8-9 months, the rhizome is dried, debarked and pulverised.

Gingerol is one of the most important flavour-giving components in the ginger rhizome, along with zingiberene and zingiberol. It is one of the healthy pungent substances in the plant world and is mainly responsible for the pungent flavour of ginger.
