Sodium hydrogen carbonate, a sodium salt of carbonic acid, belongs to the group of hydrogen carbonates and is also known as cooking soda, baking soda or natron. This colourless, crystalline solid decomposes above 50°C to form sodium carbonate, water and carbon dioxide. Sodium hydrogen carbonate is a versatile substance that is used as a leavening agent, water softener, cleaning agent and odour neutraliser. In food, it is used to neutralise excess acidity and as a leavening agent in baking powders. It is generally authorised for use in foodstuffs without maximum quantity restrictions.
