What exactly is lemon balm?
Lemon balm (Melissa officinalis), also known as lemon balm, is a plant that belongs to the labiate family. Originally from the warm south, the plant is now widespread throughout Central Europe, but is found wild in the eastern Mediterranean region. Lemon balm has a mild lemon flavour and a sour taste. It grows to a height of between 60 and 80 centimetres and prefers sunny and sheltered places.
The popular names such as women's wellbeing, heart comforter or nervine indicate a wide range of possible uses. The most important ingredients of lemon balm are mainly found on the upper side of the finely hairy leaves. It should therefore be harvested before the flowering period, which usually lasts from July to August. Lemon balm was already being used in ancient times. Pliny, Hildegard von Bingen, Charlemagne and Paracelsus also held this plant in high esteem. Charlemagne even issued a decree that lemon balm had to be cultivated in every monastery in Europe.
