The precious spice is part of the Crocus Sativus flower, commonly known as the "saffron crocus". Saffron crocus grows up to 20 or 30 cm tall and bears up to four flowers, each with three vivid crimson stigmas. The pistils and stigmas - called filaments - are collected and dried to be used mainly as a spice and colouring agent in food. Around 150,00 saffron flowers are needed to produce 1 kg of saffron spice. This very labour-intensive process therefore answers the question of why the production of this spice is so expensive.
This fact naturally attracts fraudsters who want to make a lucrative business by selling counterfeit saffron.
